
Ingredients for 4 servings:
1 lb. red cabbage1 small head of red beet
2 medium carrots
½ cup canned corn
3 tablespoons hazelnuts
For the dressing:
3 tablespoons olive oil, 1 tablespoon balsamic vinegarSpices:
Salt and ground black pepper to taste, 2 tablespoons finely chopped parsleyInstructions:
Clear the red cabbage, wash and cut into very thin strips. Put it in a deep bowl. Peel andwash the red beets and carrots. Grate them finely. Add them together with the drained corn
in the bowl. Prepare the dressing in a separate container. Mix the ingredients and stir them
vigorously. Pour over the salad and stir it carefully. Sprinkle the salad with crushed
hazelnuts and parsley.
