
Ingredients:
1 whole chicken, fresh or chilled1 cup pitted olives
3-4 tablespoons butter
1 small onion
1 clove garlic
1 tablespoon flour
Spices: 3 bay leaves, 1 teaspoon oregano, 2 grains pimento, ground black pepper and salt
to taste
Instructions:
Cut chicken into portions. Sprinkle it with salt and ground black pepper. Preheat the fryingpan, place 1-2 spoons of butter. When it is melted, add the chicken meat and fry it until
golden in color. Remove the meat and put it away.
In the pan in which the chicken was fried put 2 tablespoons butter, finely chopped onion
and garlic. Stir for 1-2 minutes and then add the flour. Start stirring continuously, add 1 ½
cup cold water. To the resulting sauce, add bay leaf, pimento and the chicken. Smother the
dish over low heat 30 minutes. Add olives and oregano. Stir and remove the dish from the
heat.
Serve the dish warm with a proper salad of the season.
