
Ingredients for 1 serving:
3 tablespoons finely chopped parsley½ tomato
2 roasted red peppers
2 chillies
1 sprig spring onion
4oz (100 g.) “Mozzarella” cheese
Spices: salt to taste, ½ tablespoon sesame oil, 1 tablespoon lemon juice
Instructions:
Wash the parsley thoroughly with cold water and dry it. Chop it very finely. Take theinside part of the tomato. External part cut into small cubes. Chop finely one of the roasted
peppers and the other one cut into thin strips. Clean and wash the onion and chop it finely.
Cut in small pieces 1 chilli. Half of the cheese cut into small cubes, and the other half cut
into slices.
Mix parsley, tomatoes, chopped pepper, chilli, onions and cut into small cubes cheese. Put
them in a shallow salad plate. Decorate the salad with peppers cut into strips and cheese
slices. In the middle of the salad put 1 chilli. Pour salad with oil and lemon juice; sprinkle
it with salt to taste. Serve the salad immediately after the preparation.
If you have no “Mozzarella” cheese, you can prepare the salad with another white cheese.
