ROAST CHICKEN WITH HERBS

Ingredients:

1 whole chicken 3 lb – 3 ½ lb
Herbs: 1 tablespoon thyme 2 tablespoons parsley, 4-5 mint leaves, a sprig of rosemary
2-3 cloves of crushed garlic
1 tablespoon honey
2 tablespoons olive oil
Spices: salt and ground black pepper to taste
If you do not have fresh herbs, you can use dried

Instructions:

In a suitable bowl, mix the honey and olive oil. Stir them vigorously and add the crushed
garlic, salt and ground black pepper. Again, stir vigorously and add finely chopped fresh
herbs.
Smear the chicken generously inside and out with the herb mixture. Wrap it with
aluminum foil. Preheat the oven to 190 C/374 F. Put the chicken on the grill or in a
baking pan and bake for 1 hour. Serve it 10 minutes after removing from the grill.
